A study at the University of Exeter in England found that eating foods rich in natural nitrates, such as beet, improves endurance during exercise. The scientists studied several substances and training methods to see which, if any, would improve endurance. Beet juice had the greatest effect, improving the ability of people to exercise 16% more than without doing it, without getting tired. It has been shown that naturally occurring nitrates widen blood vessels and allow more oxygen-rich blood to travel to the heart.
Raw beets or raw beet juice contain betaine, a natural anti-inflammatory that helps protect against aging and diseases.

The phytonutrient, proanthocyanidin, which gives beet its rich purplish color, is also a potent anti-cancer compound. Meanwhile, the fiber found in beets also helps protect against cancer.
