MSG hides in practically all the processed and packaged foods that we eat, from vegetables to organic milk. No matter our diligent efforts to avoid this additive, we are likely to launch a sneak attack from time to time. Fortunately, a pinch of tartar cream may be all you need to alleviate those MSG reactions.
What is MSG and why is it in my food?
Monosodium glutamate (MSG) is a glutamic acid created from the fermentation of molasses and starch. It is added to foods (notoriously Chinese foods) as a preservative and flavor enhancer. When heated, MSG can quickly become toxic, producing side effects that range from mild to severe. Symptoms of MSG sensitivity include:
Tingling in the skin Numbness Feeling of burning in the chest and neck Nausea Swelling of the face, mouth, and tongue Panic attacks Difficulty breathing Palpitations Confusion Drowsiness High blood pressure Headaches Migraines Asthma Congestive dizziness or runny nose
Cream of Tartar to the Rescue.
If you are sensitive to MSG, it is useful to have hand tartar cream. Scan the spice section of your local store to get some tarter cream, a white, odorless powder that forms from the sediment that accumulates in the bottom of the barrels during vinification. When a teaspoon is mixed with 8 ounces of water, the tartar cream neutralizes the toxic effects of MSG. The cream of tartar is traditionally used in the preparation of foods to stabilize egg whites and syrups and sugary chocolates. In the same way, the tartar cream stabilizes your body forming an alkaline environment and raising its pH, thus mitigating MSG headaches, allergies and the like.
